Millets Pudding

 recipe:



*Ingredients:*


- 1 cup mixed millets (ragi, bajra, jowar, or any combination)

- 2 cups water

- 1 cup milk

- 1/4 cup sugar (or honey/maple syrup)

- 1/4 teaspoon cardamom powder

- 1/4 teaspoon saffron threads (optional)

- 1 tablespoon ghee

- Chopped nuts (cashews, almonds) for garnish



*Instructions:*


1. Rinse and soak the millets for 30 minutes. Drain and cook with 2 cups water until tender.

2. Mash cooked millets into a smooth paste.

3. Heat ghee in a pan and sauté cardamom powder for 1 minute.

4. Add milk, sugar, and mashed millet paste. Stir well.

5. Cook on low heat, stirring constantly, until thickened (about 10-15 minutes).

6. Add saffron threads (if using) and stir well.

7. Chill in refrigerator for 2 hours.

8. Garnish with chopped nuts.

1. Add dried fruits (cranberries, raisins) for extra flavor.

2. Use coconut milk for creamier texture.

3. Flavor with rosewater or kewra essence.

4. Add a pinch of salt to balance sweetness.
