Millets Payasam

 recipe:



*Ingredients:*


- 1 cup mixed millets (ragi, bajra, jowar, or any combination)

- 4 cups water

- 1 cup milk

- 1/2 cup grated coconut

- 1/4 cup jaggery (or sugar)

- 1/4 teaspoon cardamom powder

- 1/4 teaspoon saffron threads (optional)

- 2 tablespoons ghee

- Chopped nuts (cashews, almonds) for garnish



*Instructions:*


1. Rinse and soak the millets for 30 minutes. Drain and cook with 4 cups water until tender.

2. In a separate pan, heat ghee and sauté grated coconut until lightly browned.

3. Add jaggery (or sugar) and cook until dissolved.

4. Add milk and cardamom powder. Stir well.

5. Combine cooked millets with coconut-milk mixture.

6. Simmer for 5-7 minutes or until thickened.

7. Garnish with chopped nuts and saffron threads (if using).



*Variations:*


1. Add dried fruits (cranberries, raisins) for extra flavor.

2. Use different sweeteners (honey, maple syrup).

3. Add a pinch of salt to balance sweetness.

4. Serve chilled or warm.
