Millets Cake recipe:



*Ingredients:*



- 1 cup mixed millets (ragi, bajra, jowar, or any combination)

- 1 cup whole wheat flour

- 1/2 cup sugar

- 1/2 cup unsweetened yogurt

- 1/4 cup ghee or oil

- 2 eggs

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- 1 teaspoon vanilla essence

- Chopped nuts (walnuts, almonds) for garnish



*Instructions:*



1. Rinse and soak millets for 30 minutes. Drain and grind into flour.

2. Mix millet flour, whole wheat flour, sugar, baking powder, baking soda, and salt.

3. In a separate bowl, whisk yogurt, ghee/oil, eggs, and vanilla essence.

4. Combine wet and dry ingredients. Mix well.

5. Pour batter into a greased 8-inch round cake pan.

6. Bake at 350°F (180°C) for 30-35 minutes or until a toothpick comes out clean.

7. Cool and garnish with chopped nuts.

1. Add dried fruits (cranberries, raisins) for extra flavor.

2. Use coconut sugar or honey for natural sweetness.

3. Replace eggs with flaxseed or applesauce.

4. Add a pinch of cinnamon or nutmeg for spice.
