Millet Chappati

- 2 cups millet flour (ragi, foxtail, proso, or multimillet)
- 1/2 cup whole wheat flour
- 1/4 teaspoon salt
- 1 tablespoon ghee or oil
- 1/2 cup lukewarm water
- Optional: sesame oil, curry leaves
*Instructions:*
1. Mix millet and whole wheat flour, salt.
2. Gradually add water, knead into a smooth dough.
3. Rest for 30 minutes.
4. Divide into 6-8 portions.
5. Roll out each portion into a thin circle (6-7 inches).
6. Heat non-stick skillet or tava.
7. Cook chapati for 1-2 minutes on each side.

2. Adjust water according to millet flour's absorption.
